Meemaw's Vegetable Soup
Ingredients
2 tbsp olive oil
1 onion, chopped
2 carrots, sliced
2 celery stalks, sliced
4 garlic cloves, minced
1 can diced tomatoes
4 cups vegetable broth
1 medium zucchini, diced
1 cup green beans
1 cup frozen peas
1 tsp oregano
1 tsp basil
1 tsp smoked paprika
Salt & pepper to taste
2 cups collard greens
Directions
Heat olive oil in a big ole pot over medium heat. Add onion, carrots, and celery, cooking for 5 minutes. Stir in garlic and cook for 1 minute until fragrant.
Add diced tomatoes, vegetable broth, oregano, basil, paprika, and a pinch of salt and pepper. Bring to a boil.
Add zucchini and green beans. Reduce heat to a simmer and cook for 15 minutes until veggies are tender.
Stir in peas and cook for another 5 minutes. Add collards and let 'em wilt. Adjust seasoning as needed.
Serve with some hot sauce and a side of cornbread.
